Centos 5 only comes with 8.1.11 and as a company, we've decided that we'll go with whatever the distro comes with. Makes things easier for management etc. I figured 8.1 is better than 7.4.7 :) Thanks, I'll give the pg_dump + restore a shot. While I think it is completely possible, (Slony can do this), but I haven't ever done this, so not sure what kind of roadblocks there might be.
