While I haven't seen any docs that specificly state how to do this I can give you a quick overview of the steps. You create a set that has all the objects you wish to replicate in it (see the basic master slave howto for an example) the 7.4 DB is the origin, 7.5 the subscriber. Subscribe the set, wait for replication to catch up.. once it's all caught up issue a switchover, and then you can uninstall node.... Keep in mind that Slony is not a network managemnet system, so it doesnt; do things like change IP addresses of servers and all that stuff.... This is a 10,000 foot overview, and I recommend you try it on a test set first untill you are confident in it's usage..
